how to make a Lebanese feast

We’ve added Barbara Massaad‘s cook book Mezze to the shorkk xmas box so you can recreate sumptuous Lebanese dishes to share with friends and family. Recipes central to Lebanon’s culinary history, they are key to a healthy diet and full of flavour too. Barbara’s mantra is to find the best ingredients you can and enjoy your time in the kitchen. Have fun experimenting over the festive period!

Don’t save it for the summer! Zejd’s extra virgin olive oil, apart from all its health benefits, has a delicate peppery taste. Pour on to soups or a plate of “rishta” just before serving, and enjoy its green floral taste.

Lebanon's most popular spice?

Sumac is much loved in Lebanon for adding a lemony citrusy zing to salads and tomatoes. Try using it instead of lemons on seafood. It works so well scattered over a plate of pan fried scallops and pancetta, served with salad leaves this makes a delicious festive treat.

Bassatin Baanoub‘s za’atar mix is made up of Origanum syriacum, sumac and sesame seeds. Delicious on top of flat bread – manoushé style – you can also use it to season fish. Sprinkle some onto salmon or mackerel before grilling for 10 minutes.

Origanum syriacum

Sprinkle this on tomatoes and potatoes towards the end of roasting and you’ll smell the mountains of Lebanon. Native to Lebanon and Syria, the medicinal properties of this oregano are well documented. It is also drunk as a tisane in Lebanon to soothe respiratory problems. Try infusing some in boiling water, adding a little honey to soothe a cough.
