A 100 different uses, but perhaps most memorable is za'atar. A mix made from thyme, oregano, sumac and sesame, which is mixed with extra virgin olive oil to be spread on flat breads for a manoushé. A few mint leaves are tucked into the olives, tomatoes and cucumbers making a mouth watering addition to your breakfast.

Mint and parsley are the key players in fattoush and tabbouleh. The herbs add flavour and important health aspects to the salads. Following Professor Tim Spector's advice, choosing colourful salads is good for us.
