aromatic herbs
The box includes Origanum syriacum seen here drying in the sun at Bassatin Baanoub’s farm 60km south of Beirut. A native variety of the region, it is grown on terraces at 650m. It is the flowering tip of the oregano plant which is prized for its aromatic flavour. This is added to sumac and sesame seeds to make a special za’atar mix.

Hugely popular at our markets – tongue tingly tangy – it adds great flavour to a British tomato. It’s also delicious instead of vanilla in this simple biscuit recipe.
