saffron ice cream

What started out as a saffron crème anglaise turned into ice cream and not because it was sunny!

Having decided to make a sort of gooseberry tarte tatin, we thought an ice cream version of custard recipe would go better.

Why not give our recipe for crème anglaise with saffron a go this weekend and maybe turn it into ice cream?

the origins of ice cream

Ice cream in Lebanon is something special. As the fruits come into season, ice cream shops like Hanna Mitri in Beirut or Awad in Achkout make sorbets which are mouthwatering. Apricot with almonds, mulberry or rosewater are hard to beat. Ashta (rich cream) rolled in pistachio squished into a rectangular wafer is iconic.

Enjoy the Food Heritage's article from 2015 as it delves into the traditions of ice cream in the region.
