Having decided to make a sort of gooseberry tarte tatin, we thought an ice cream version of custard recipe would go better.

Ice cream in Lebanon is something special. As the fruits come into season, ice cream shops like Hanna Mitri in Beirut or Awad in Achkout make sorbets which are mouthwatering. Apricot with almonds, mulberry or rosewater are hard to beat. Ashta (rich cream) rolled in pistachio squished into a rectangular wafer is iconic.
